Hot Mango Salsa
This quick and easy salsa takes about 20 minutes to whip up and requires nothing more than a little preparation and 15 minutes of stove time.
It is ideal to serve over pork, which is always complemented by the addition of some sort of fruit. It also goes well with chicken or fish.
It can be prepared and then cooked with the meat dish or cooked just prior and served while still warm.
1/2 finely chopped onion
1/2 tablespoon butter
1 large peeled mango, diced
1 cup cherry tomatoes - halved
2 tablespoons red wine
1/2 cup chicken stock
salt and freshly ground black pepper
juice of 1/2 a lemon
Heat a small heavy based pan on a medium to high heat and melt the butter.
Add the chopped onion and sauté, stirring constantly until the onion begins to brown.
De glaze the pan by adding the red wine and cook until wine has nearly evaporated.
Add the chopped mango and cherry tomatoes and blend into the onion breaking the fruits down slightly with a wooden spoon. Cook on a medium to low heat for 5 minutes.
Add the chicken stock, lemon juice and season with salt and pepper to taste.
Cook for a further 10 minutes.
Spoon over a freshly cooked cutlet or fillet of pork.
